Shrimp with Ketchup and Onions

Level of Difficulty:

Preparation time: 20 minutes

Ingredients:
1-1/2 pounds jumbo shrimp
1 small sweet (Vidalia) onion
1/2 cup ketchup
1 tablespoon sugar
1 tablespoon vegetable oil
1/4 teaspoon salt

Preparation:
1. De-shell and de-vein shrimp, rinse and set aside.
2. Remove skin from onion and cut into slices.

Cooking instructions:
1. Heat vegetable oil in wok.
2. Sprinkle in salt.
3. Stir-fry onions until well done.
4. Add shrimp and stir-fry for about 5 minutes or until done.
5. Mix in ketchup and sugar.
6. Serve with rice.

Makes 4 servings.
