Braised Beef Brisket with Turnip

Level of Difficulty:
Preparation time: 90 minutes

Ingredients:
3 pounds beef brisket or stew beef
2 medium white Chinese turnip, about 12" long, 2" diameter
1/2 cup Lee Kum Kee Marinade
1-1/2 cups water
3 tablespoons sugar
6 slices of ginger
6 pieces of dried star anise
4 stalks of scallions
1 head of lettuce (iceberg, Romaine or Boston)

Preparation:
1. Cut beef into 1" square cubes.
2. Peel turnip and cut into chunks.
3. Rinse star anise.
4. Trim ends, rinse and cut scallions into 1" long pieces.
5. Separate lettuce leaves and rinse.

Cooking instructions:
1. Heat marinade, water, sugar, ginger, and anise in a 5-quart pot until boiling.
2. Add beef, lower heat to a slow simmer, cover pot and braise 60 minutes.
3. Stir beef occasionally while it is cooking.
4. Turn up heat slightly, add scallions and turnip, mix well.
5. When it comes to a boil again, reduce heat to a slow simmer.
6. Cover pot and cook another 20 minutes or until turnip is cooked through, stirring occasionally.
7. Place lettuce into the sauce under the beef and turnip and cook 3 minutes.
8. Remove lettuce and place on a serving platter, then remove beef and turnip and place over the lettuce.
9. Pour the sauce from the pot over the beef and turnips.
10. Serve with rice or noodles.

Makes 4 servings.
